During his long 30-year career, Monsieur Francis Miot has accompanied and supported his employees and collaborators in their artistic and qualitative growth, astounding and amazing French and international customers. The principles on which the company is founded are few, but well-representative of its founder’s philosophy: the aspiration to excellence, the constant quality – both in the raw material and in the finished product –, the artisanal nature of the production process and, finally, creativity – a fundamental ingredient in today’s saturated jam sector.
The fruit is selected from eco-responsible and supportive producers, to fully safeguard and preserve the aromas, flavors and organoleptic properties of the raw materials. To respect the quality of their taste, the raw materials are harvested exclusively just beyond the ideal ripening point: in fact, at this moment the fruit is much more sugary, containing more fructose, which makes it possible to avoid having to add more sugar than necessary. Only copper and stainless steel cauldrons are used to make the spreads, for a maximum of 100 kg of fruit: the cooking time is short and over a low heat (between 5-10 minutes at 90 to 100 °C), allowing all the original taste of the fruit to be preserved. In fact, short cooking times mean less sugar and a richer fruit flavor.
Moreover, in true artisanal tradition, the spreads are treated exclusively with beech wood spatulas and visually controlled to arrive at the right consistency of the fruit during cooking. Sterilization does not take place in an autoclave – which would be like cooking the jams twice – but the jars are instead turned upside down for 10 minutes in a totally sanitized manner.
These small steps – simple to write down but difficult to carry out – help elevate Miot spreads into genuine artisanal products.
