Castelmagno D'Alpeggio PDO – Traditional Italian Cheese
The Castelmagno D'Alpeggio PDO is produced only in a restricted area of the Val Grana, corresponding to the three municipalities of Castelmagno, Pradleves, and Monterosso Grana.
The DOC dates back to 1982, and the PDO recognition was granted in 1996. The mountain production is limited to a single cheesemaker. Numerous attempts at imitation in the surrounding countries and valleys have been made, often with names that somehow recall "Castelmagno".
The origins of Castelmagno PDO are ancient: traces of its existence date back to 1277, in a decree mentioning it as a tribute due from the usufructuaries to the Marquis of Saluzzo, the owner of the pastures in the municipalities of Castelmagno and Celle di Macra.

Chef's Tip
The strong flavor with subtle barn-like notes and pronounced penicillium aromas pairs well with full-bodied, aged red wines, sweet and fortified wines, white watermelon mustard, blueberry jam, rye bread, and polenta.

The Company
When great-grandfather Luigi Guffanti, in 1876, began aging Gorgonzola, his brilliant intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese. The rest is simply history! Over time, the Guffanti family has specialized in selecting, aging, and refining the best Italian and international dairy products: the experience gained with Gorgonzola, which remains their flagship, has gradually been transferred to all other types of cheese.
